What's Cooking - Meal Plan Week 1

I have a superpower.

Okay, let's be real it's about the lamest superpower in the world.

I am really really great at planning our weekly menus.

Boom. 



There is just something I enjoy about planning for a new week. Maybe its the possibilities of the blank pages in my menu notebook. Maybe its the joy of spending all of my money buying fresh veggies and meats to cook with.  Or maybe its the love I have of searching through the thousands of recipes on pinterest.

Frankly this superpower is getting more lame by the second, I should stop.

But for real, I manage to plan a weekly menu for three people, go to the grocery store only once a week, avoid the ridiculous cost of eating out, keep it healthy and prepare meals in a time frame allotted to someone who battles an hour commute home after teaching middle schoolers.

So if that isn't a superpower I don't know what is.

Monday:  20 Minute Healthy Chicken Parmesan - we decided to sub the zoodles and use spaghetti squash noodles. 

Tuesday:  Fried Rice - add whatever type of protein you have on hand, or don't your call. Chicken is cheap and we buy it in bulk so chicken it is.

Wednesday: Harvest Salad with Maple Balsamic Dressing - add whatever type of protein you have on hand - we are mixing it up with sausage.

Thursday: Easy Oven Baked Spicy Chicken Tacos - our treat.

Friday:  Anything You Have Coconut Curry Soup - great way to clean out the remaining veggies and proteins from the week.

Lunch:  Roasted Butternut Squash, Kale and Cranberry Salad - and you guessed it add chicken.

Hands down my favorite chicken recipe that I repeat at least three to four times a week is from Gimme Some Oven.

Hopefully you find our menu helpful, inspiration or maybe deep down you are just a little jealous of my superpower.
